Sugared Cranberry and Rosemary

Sugared cranberries and rosemary are beautifully festive and can be used to garnish desserts, cocktails or platters. The cranberries are delicious on their own as well. They pop in your mouth and provide a wonderful contrast of a sweet outside and tart inside. 

To make this recipe, the cranberries and rosemary are soaked in simple syrup overnight, creating a flavoured syrup. Make sure to save this and use to sweeten cocktails, lattes or desserts. 

Sugared Cranberry and Rosemary

Ingredients:

1 cup water

2 cups granulated sugar

2 cups fresh cranberries

Handful of rosemary sprigs

In a pot over high heat, bring 1 cup of water to a boil. Stir in 1 cup sugar until dissolved, then remove from heat and set aside to cool until warm. This 1:1 water and sugar mixture is simple syrup.

Place cranberries and rosemary sprigs in a large glass container. Poor the simple syrup over the cranberries and rosemary. Cover the container and place in the fridge overnight.

The next day, strain the cranberries and rosemary. Save the strained, flavoured simple syrup for use in desserts or drinks! Roll the cranberries and rosemary in 1 cup of sugar, then transfer to a parchment lined baking sheet to dry. They will be dry in a couple of hours and keep for 2 days.
